This recipe is perfect if you’re into grain-free living, gluten free or just like being generally healthy. It’s a great recipe for breakfast or as a healthy snack and it’s also seriously delicious and nutritious.Ingredients
- 1 1/2 cups pecans
- 1 cup shredded coconut
- 1/2 cup almonds
- 1/2 cup dates (or any other dried fruit you like)
- (Add any extra nuts/seeds you like)
- 1 Tbs Maple syrup (you can go without the maple syrup and add extra dates)
- 1 Tsp vanilla essence
- 1/8 tsp salt
- Heaped tbs butter
Directions
Preheat your oven to around 180 C.
Mix all the dry ingredients in a food processor for a few seconds, add the wet ingredients (melt them all together in the microwave for about 30 secs first) and whizz it all up. Don’t blend it too much, you want some chunky bits in it. Grease a 9×9 square baking tin with butter and pack the mixture into the tin. Bake for about 10 -15 mins or until golden brown on top.
Once cooled cut the granola into squares or break it up a bit and store in an air tight container for easy access when your craving a yummy snack.
I have this broken up on warme berries with yogurt and a little cream.You can also use the mixture as a crumble topping. Very yummy!
